NARISAWA in Minami-Aoyama, Tokyo, is now known as a world-class restaurant. Chef Yoshihiro Narisawa has a brilliant career, having been selected for more than 10 consecutive years in the "World's 50 Best Restaurants," known as the Oscars of the culinary world, and in 2010 was chosen as the "World's Most Influential Chef" at the world's highest culinary conference held in Spain. Since opening in 2003, Narisawa's unique dishes have impressed gourmets both in Japan and abroad.
Narizawa's cuisine, which has launched a unique genre called "innovative Satoyama cuisine," has been innovative many times in the past. The first dish to show a glimpse of his current style was "Soil Soup" served at the predecessor French restaurant "La Napoule" (Odawara, Kanagawa) in 2001. It was around this time that he became conscious of his responsibility and role in the society surrounding food, such as the true safety of food, how to interact with producers, and the sustainability of the natural environment from which ingredients are produced. He then created "Charcoal Cuisine" and "Water Cuisine", and at a culinary conference held in Brazil in 2010, he established a unique genre that respects the rich food culture and wisdom of our ancestors (Satoyama culture) in Japan's Satoyama and expresses it through his cuisine through the NARISAWA filter.
His specialty dish, "Satoyama Scenery", is a dish that symbolizes this concept. In Japan, "Satoyama" is a place where people cultivate fields, grow rice, and coexist with nature in the forest and sea. In Satoyama, people live their lives by getting to know the environment given to them according to the changes of the seasons, and by taking only what they need. This is "Satoyama culture," and this dish expresses Japan's irreplaceable culture, which is beneficial to the mind and body of Satoyama and sustainable for the natural environment.
